Dolphin (Mahi Mahi) is one of the most popular fish for a variety of reasons. First of all, it is probably one of the most delicious and easy eating fish available. The fact is that most people who eat fish enjoy a Mahi sandwich now and then. It is also one of the most readily available fish in South Florida. Most Florida super markets carry fresh and frozen Mahi Mahi throughout the year. And, for you fisherman out there, Dolphin is one of the most fun to catch. The summer months are some of the best months to target Dolphin for fisherman, so we are always looking for different ways to eat this spectacular fish, and salad is always a good choice in the summer time. This recipe is probably the easiest and personally one of my favorite ways to enjoy Mahi Mahi.
INGREDIENTS
- Dolphin (Mahi Mahi) fillets – fresh if available, 6 oz per person
- Butter
- Olive Oil
- Blackening spice – I like Chef Prudhomme’s Blackened Redfish Magic, but if you prefer a salt free seasoning this one is good.
- Romaine lettuce – one heart per person, or you can buy it ready to go in a bag
- Your favorite Caesar dressing – I like Marzetti Simply Dressed Caesar (in the produce section), and I keep a bottle of Cardini’s in the cupboard just in case.
- Croutons
- Black pepper
- Grated Parmesan cheese
- Fresh lemon
INSTRUCTIONS
- Season the fish on both sides liberally with blackening spice.
- Melt butter and olive oil in a frying pan over medium high heat. 2 tbsp butter and 1 tbsp oil is usually enough for 2-4 fillets.
- When butter is hot (not burned), add fillets to pan. The fish should sizzle when you add it to the pan. Cook for 3-4 minutes, until golden brown, flip and cook on other side until done. Do not over cook. Blackened does not mean burned! Fish should be nice and flaky. Squeeze fresh lemon over cooked fish.
- While fish is cooking toss romaine with dressing and croutons. Sprinkle with Parmesan and black pepper. Top with fish. Enjoy!
